Broccoli, Shiitake Mushrooms, Pak Choi and Rice Noodles

"I love making a stir fry. They're a great way of packing in your veggies, and they are so quick to make. This dish took me around 30 minutes in total."

Vegan | Easy | Prep time 10 minutes | cooking time 20 minutes | serves 2

Ingredients:

1 portion of brown rice noodles

1 tbsp coconut oil

Shiitake mushrooms

Tenderstem broccoli

1 spring onion

A handful of broccoli sprouts

Sesame seeds

1 red chilli

1 bulb of pak choi


For the paste:

1 shallot

2cm piece of ginger

2 garlic cloves

2 tbsp soy sauce




Method:

1️. Cook the brown rice noodles according to the instructions


2️. While the noodles are cooking make the paste by putting the ingredients in a blender. Blitz until roughly blended.


3️. Melt the coconut oil in a frying pan, on medium heat. Add the paste for 1 minute, then add the broccoli, cook for 5 minutes, then add the pak choi. Add a splash of water, cover and cook for 2 minutes.


4️. Stir the cooked noodles into the vegetables. Remove from the heat and serve in a bowl. Garnish with chopped chilli, spring onion, and broccoli sprouts.


 

This dish has three sources of cruciferous vegetables: Broccoli, broccoli sprouts and pak choi. Great sources of fibre, folate, vitamin C, E and K.


Shiitake mushrooms, ginger and garlic contain properties that are beneficial for supporting the immune system.
